What is ‘Not Bread’?

Not Bread is a gluten-free, dairy free seed loaf crafted from organic oats, seeds, honey, olive oil and sea salt.

We don’t use flour, eggs, nor butter. Not Bread offers wholesome nourishment that is balanced with fiber, protein, and good fats (from seeds, of course!).

All Not Bread and mixes are handcrafted in small batches in Bend and Portland, Oregon.

Why ‘Not Bread’?

As a cardiologist, I have seen the development of coronary heart disease due to elevated blood sugar levels. In the adult age group of 45-65 years, estimates are that 45% of the population has pre-diabetes; over 65 years, nearly 50% of adults have pre-diabetes. Diabetes has devastating consequences on cardiovascular health, resulting in heart attack, stroke, and dementia. 

In the past, my typical breakfast had been whole-grain toast with coffee. I wore a continuous glucose monitor for two weeks to better understand my blood sugar response to various foods. My whole-grain toast for breakfast spiked my blood sugar to unacceptably high levels. I then tested Not Bread with peanut butter and several different kinds of cheese and found a gradual and muted blood sugar response
